Bikini

Serves 10 guests

To make the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

To make the Premix (yields 850ml, serving 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Instructions

To prepare the Syrup: Put all the ingredients into a pan, heat until it reaches a light boil, agitating to dissolve. Then, turn off the stove allowing it to cool completely. Transfer into a clean bottle, cap it and refrigerate it chilled, it will last for around one month.

Preparing the Premix: Mix all the spirits and syrup into a big jug, allow it to infuse for 60 minutes, then filter it best through muslin, so it's perfectly clear.

When ready to serve: Measure 85ml of your premix into your cocktail shaker packed with ice, and stir gently for a minute until cold. Pour to a cold coupe glass or a similar vessel, top with the cranberries adding the final touch using a light spray of the essential oil over the top.
